Smoked Truffle Elote Corn

This recipe keeps things fresh and crisp with a 1-to-1 combination of apple cider vinegar and mayonnaise. It’s the perfect crunchy, smoky, and sweet accompaniment for your summer barbecue.

INGREDIENTS

SERVINGS: 4

4 ears of fresh corn (on the cob)

2 tbsp mayonnaise

2 tbsp grated Cotija cheese

1 lime, cut into 8 wedges

1 tsp tajin seasoning

½ tbsp Sabatino Tartufi Truffle & Smoked Sea Salt

DIRECTIONS

Steam or boil ears of corn in until cooked, about 6 minutes.

Drain water and allow corn to cool slightly. Once cool enough to handle, smear each ear of corn evenly with mayonnaise, followed by 1 and ½ teaspoons of cotija cheese.

Last, carefully squeeze the juice of 1 lime wedge over each ear to lightly coat each piece.

Lightly sprinkle Tajin seasoning on each piece.

Season each ear with ½ tsp Sabatino Truffle & Smoked Sea Salt, or to taste. Serve and enjoy.
